Over time, I got tired of feeling awful all the time. I just knew there had to be a better way to live life. I didn’t want to feel bloated or have stomach cramps and low energy all the time.

 

I didn’t want to just suffer from these problems… as well as inflammation, achey joints, and weight gin that was starting to show up.

 

I Wanted To Feel Normal And Like Myself Again

Well, not knowing what was wrong with me, I decided to take matters into my own hands and started researching everything and anything I could. I did this for years.

 

I remember talking with some friends one day about how they had eliminated gluten and gluten products from their diet and how much better it had made them feel.

 

So I decided to start there. The trouble was… I had always considered myself “an emotional eater”.

But I knew I had to do it. Not only for my own health… but for my son as well. He was about to turn three years old and he was starting to get constant rashes on his face.

 

I haltingly had him go gluten-free over the course of 3 months– mostly on, sometimes off– and noticed that his rash faded almost completely. What I didn’t expect was that he turned into little Mr. Sunshine. While his temper didn’t disappear, he had many more moments of being simply, quietly happy. He was easier to reason with and more loving.

I didn’t want my son (then 3-years-old) having to deal with problems if they could be eliminated by simply removing certain foods from his diet.

 

I realized how totally unfair it was to feed him food that made him cranky, and then discipline him for making bad choices.

 

I also realized that if I didn’t change something, we were both going to hit bigger problems down the road!

 

I have to admit… I was always a little worried that I just wouldn’t have the willpower needed to make the gluten-free lifestyle stick.

 

But I was able to do it… WITHOUT relying on willpower to succeed! I changed my perspective on experiencing the emotional ups-and-downs and setbacks that are inevitable in any dietary-changing process.

 

I no longer saw them as setbacks, but as crucial steps to catapult me to the next level! This perspective shift was one of the keys to our success.

After realizing that gluten could indeed be the culprit, I went on a personal mission and spent hours and hours reading and studying all of the books I could find on gluten-free diets.

 

I was able to find books about the scientific basis of celiac disease and I found gluten-free cookbooks. But it was so frustrating! I wanted to improve my health and yet it seems like every last gluten free cookbook has cakes or cookies on the cover!

 

If I was going to make this shift, I wanted to restore my energy and digestive health once and for all, not just replace gluten-based refined food for gluten-free sweet treats. I knew there had to be another way!

 

I also knew that removing sweets completely would make me crazy (or make me binge), so I had to discover treats that MADE ME FEEL GOOD and improved my health.

I Felt Simply Amazing…

But to test out whether or not it WAS the gluten causing my problems… I’d start eating some of the foods that had gluten in them. And right after I did that… I’d start experiencing the same symptoms as before.

 

I’d start to feel sick again and I’d get gassy, bloated stomach pains! But now it was even more pronounced!

 

To make finding the culprit a lot easier, I started writing down everything I ate, so I could accurately go back and check.

 

Not only that, but if my son ate something with gluten in it, his rashes and bad temper would return after they had completely gone away from being gluten-free.

 

I Finally Figured It Out… After A Ton of Trial And Error

Finally… the connection between what I was eating and how I was feeling was made.

 

I kept the tips that seemed to help and got rid of the ones that didn’t seem to make a difference in how I felt.

 

I was my own guinea pig.
